Dandelions mean Summer is Near





It's hurricane season once again. We have had quite a lot of rain so far. Today is a nice day though...so far.Thunderstorms are predicted for later this afternoon and tonight again.

I hope nothing comes of it. I am not fond of this time of year with its sub- tropical weather and heavy muggy days. So far it's been very nice , however. I pray it stays this way.


I found a nice recipe for Dandelion Pesto. Since so many people get dandelions in the lawn, why not use them. They are a veggie and they are very good for you, loaded with vitamins.


So here is the recipe. Hope you like it.



2 cups tightly packed dandelion leaves, well-rinsed and dried (don't eat the flower)
1 dozen large basil leaves
2 garlic cloves
1 cup lightly toasted hazelnuts (skins removed), or toasted almonds, pine nuts, or walnuts
1/2 cup olive oil
1/2cup grated Parmigiano-Reggiano cheese (optional)
Kosher or sea salt and freshly ground black pepper
In the bowl of a food processor or blender, pulse together dandelion leaves, basil, garlic, and nuts. Scrape down the sides of the bowl. With the motor running, add olive oil and process until a smooth paste forms. Pulse in cheese if you like. Season to taste with salt and pepper.


New dandelions are not as bitter as older leaves. But if you like Broccoli Rabe you might like dandelions.

    What a beautiful picture of the dandelions, it's just so pretty with the bright yellow colors.
    If it's sub-tropical and muggy up there, you can imagine what it's like down here. Although I am getting used to it. I pray for shade lol

    I've never heard of eating dandelions although I have had other flowers (pansys, I think) in a salad at a fancy Palm Springs resort. Connie uses fiddle leaf ferns in a recipe. Hope this hurrican season isn't too bad. I love the heat but not humidity. We have a fairly dry heat in SoCal. (((Hugz)))
